Soak one cup of dried anchovies in warm water for 10-15 mins to soften. After 15 mins, drain the water from the anchovies.

Add half a tablespoon of oil. Once hot, add anchovy and stir fry on medium-high heat for 4-5mins. Once fried, remove it from the pan and set it aside.

Once fried, remove it from the pan and set it aside.
Add oil. Once hot add cumin seeds. Let it cook for a min until the color changes to brown.

Then add ginger, garlic, and green chilies to the pan. Stir fry it for a few minutes.

Add chopped onion. Cook it until the onion color changes to brown and softens.

Once the onion softens, add chopped tomatoes and cook it for a few mins on medium-high heat.

Once the tomato is half cooked, add all spices.
¼ tsp curry masala powder, ¼ tsp kashmiri red chili powder, ¼ tsp ground turmeric
Combine everything well. Cook it for 2-3 minutes. Add half a cup of water. Let it simmer.

Once the paste becomes thick or water-dried, add fried anchovy and combine everything well. Add half a cup of water and let it simmer for 4-5 mins.

Last but not least, season with salt and add cilantro. Combine everything and anchovy curry is ready to be served
