Anchovy Curry
Dried anchovy curry is super easy to make and pairs perfectly with rice or roti.
Whenever I’m craving fish curry but don’t have fresh fish on hand, I turn to dried anchovies.
They’re a lifesaver in the pantry and make a dish that’s both easy to make and incredibly flavorful.

Here are the step-by-step instructions for making dried anchovy curry.
Ingredients You Need

Anchovy: Dry Anchovy
Vegetables: Onion, tomato, green chili and cilantro
Spices: Turmeric powder, red chili kashmiri powder, curry powder, and cumin seeds
Seasoning: Ginger, garlic, and salt to taste
Oil: I’m using olive oil, but you can use any vegetable oil of your choice
Instructions

- Firstly, soak one cup of dried anchovies in warm water for 10-15 minutes to soften them. After 15 minutes, drain the water from the anchovies.
- Heat oil on a pan.
- Once hot, add anchovy and stir fry on medium-high heat for 4-5mins. Don’t let it burn. Once fried, remove it from the pan and set it aside.
- Add oil. Once hot add cumin seeds. Let them cook for a minute until they turn brown.
- Add ginger & garlic and green chili to the pan. Stir fry for a few minutes.
- After that, add chopped onion. Cook it until the onion color changes to brown and softens.

- Once the onion softens, add chopped tomatoes and cook it for a few minutes on medium-high heat.
- Once the tomato is half cooked, add all spices: turmeric, curry powder, red Kashmiri powder.
- Mix everything well. Cook it for 2-3 minutes. Add half a cup of water. Let it simmer.
- Once the paste becomes thick or water-dried, add fried anchovy and combine everything well.

- Add half a cup of water and let it simmer for 4-5 mins.
- Finally, season with salt and garnish it with cilantro. Mix everything well. And anchovy curry is ready to serve.
Serving
There is no better way to eat curry than with rice or roti. Serve it with white rice, chapati, naan, or roti. I like it best with rice. You can also eat it with bread if you don’t have rice or roti.
