Nepali Chicken Choila Recipe (Nepali Chicken Salad)

Chicken Choila is a Nepali favorite. Spicy and flavorful, it's great with rice, roti, or chuira. Eat it alone too - it's that good!

Equipment

Ingredients

  • 13 oz chicken thigh (Roughly 370g)

Vegetables

  • 1 tomato (roughly 72g)
  • cup chopped red onion
  • cup chopped cilantro
  • 1 green chili (As per taste)
  • 1 dry red chili
  • 1 tbsp chopped green onion (optional)

Seasoning

  • 1 tbsp lemon juice
  • salt (As per taste)
  • 1 tsp minced ginger & garlic
  • ¼ tsp fenugreek seeds
  • ¼ tsp sichuan pepper powder (Timmur ko chop)

Other

  • 1 tbsp oil (tempering)
  • 1 tbsp frying chicken

Instructions

  • Add oil to the pan.
    1 tbsp frying chicken
  • Once hot, add chicken. Cook chicken for 3-5 minutes on each side until golden brown.

  • Once cooked, transfer it to a bowl.
  • Boil tomato and red chili for 5 minutes on high heat until they're well cooked. If you prefer, you can grill instead.
    1 tomato (roughly 72g), 1 dry red chili
  • Remove the outer layer of tomato. Add tomato and red chili to the silauta and make tomato paste.
  • Then add chopped onion, cilantro, green onion, minced ginger, garlic, and tomato paste to the bowl.
    ⅓ cup chopped red onion, ⅓ cup chopped cilantro, 1 green chili (As per taste), 1 tbsp lemon juice, salt (As per taste), 1 tsp minced ginger & garlic, 1 tbsp chopped green onion (optional)
  • Next, add all spices, lemon and salt to the bowl.
    ¼ tsp Ground cumin, ¼ tsp kashmiri red chili powder, ¼ tsp sichuan pepper powder, ¼ tsp ground turmeric, ¼ tsp Ground coriander

Tempering

  • Heat oil. Once hot, add the fenugreek seeds.
    1 tbsp oil (tempering), ¼ tsp fenugreek seeds
  • Cook for a few minutes until brown. Then, pour the oil into the bowl. Mix everything well, and chicken choila is ready to serve!

Notes

#Traditionally, meat for Choila is grilled for its smoky flavor. Since grilling isn’t always an option, I’m using fried chicken instead.
# Instead of boiling tomato, you can grill it.
# You can use a mixer or blender to make a tomato paste. 
# Please feel free to add green chili according to your taste. Since I like my choila spicy, I've added two green chilies.
# You can make chicken choila healthier by using chicken breast and boiling it instead of frying it. Also, you can skip tempering to avoid oil.
