If you are bored of eating the same chicken salad, try this Nepali chicken choila recipe (spicy chicken salad ). It is a must-try and one of my favorite Nepali appetizers to make!

Chicken Choila

Choila is a traditional Newari dish from Nepal made with spiced, grilled, or roasted meat, typically buffalo or chicken.

If you have the option, grilling is always the best way to go.

But for a simpler, more convenient approach, I’ve created a fried version that’s just as delicious.

It is a popular dish in Nepal, usually served with chuira(beaten rice) and achar (pickled vegetables). This dish is well known for its unique blend of spices and flavors.

Ingredients

INGREDIENTS FOR CHICKEN CHOILA

Chicken: I’m using chicken thighs, but you can also use chicken breast if you prefer. Cut the chicken into small to medium-sized pieces.

Vegetables: Red onion, tomato, cilantro, green chili, red chili, and green onion (optional).

Seasoning: Lemon juice, salt to taste, ginger garlic paste, sichuan pepper (timmur) and fenugreek seeds.

Oil: Mustard oil or any vegetable of your choice.

Spices: Turmeric powder, kashmiri chili powder, cumin, coriander powder.

Cilantro and green onion for garnishing.

CHICKEN CHOILA STEP 1 -3
  • Add oil to the pan. Once hot, add chicken. The chicken should be cooked on each side for 3-5 minutes until golden brown.
  • Once cooked, transfer it to bowl.

Note:

Traditionally, meat for Choila is grilled for its smoky flavor. Since grilling isn’t always an option, I’m using fried chicken instead.

  • Boil the tomato and red chili for 4-6 minutes on medium-high heat.
  • Once the tomato is cooked, remove the outer layer.
  • Add cooked tomato and red chili to the Nepali grinder (silauta). Grind to make tomato paste.

  • Add chopped onion, cilantro, green chili, minced ginger garlic, tomato paste alongside with all spices to the bowl.
  • Lastly, add oil to a pan. Once hot, add the fenugreek seeds. Cook for a few minutes until brown. After that, pour the oil into the bowl. Mix everything well, and chicken choila is ready to serve!

Serving Suggestion

Chicken Choila is usually served in Nepal with beaten rice (Chuira). However, whenever I prepare chicken Choila, I often pair it with roti or bread, sometimes even with rice and lassi.

In short, chicken choila pairs well with rice, chuira, or naan! I have to say that this dish is quite tasty on its own as well.

Equipment

Ingredients

  • 13 oz chicken thigh (Roughly 370g)

Vegetables

  • 1 tomato (roughly 72g)
  • cup chopped red onion
  • cup chopped cilantro
  • 1 green chili (As per taste)
  • 1 dry red chili
  • 1 tbsp chopped green onion (optional)

Seasoning

  • 1 tbsp lemon juice
  • salt (As per taste)
  • 1 tsp minced ginger & garlic
  • ¼ tsp fenugreek seeds
  • ¼ tsp sichuan pepper powder (Timmur ko chop)

Spices

Other

  • 1 tbsp oil (tempering)
  • 1 tbsp frying chicken

Instructions

  • Add oil to the pan.

  • Once hot, add chicken. Cook chicken for 3-5 minutes on each side until golden brown.

  • Once cooked, transfer it to a bowl.
  • Boil tomato and red chili for 5 minutes on high heat until they're well cooked. If you prefer, you can grill instead.
    1 tomato (roughly 72g), 1 dry red chili
  • Remove the outer layer of tomato. Add tomato and red chili to the silauta and make tomato paste.
  • Then add chopped onion, cilantro, green onion, minced ginger, garlic, and tomato paste to the bowl.
    ⅓ cup chopped red onion, ⅓ cup chopped cilantro, 1 green chili (As per taste), 1 tbsp lemon juice, salt (As per taste), 1 tsp minced ginger & garlic, 1 tbsp chopped green onion (optional)
  • Next, add all spices, lemon and salt to the bowl.
    ¼ tsp Ground cumin, ¼ tsp red chili kashmiri powder, ¼ tsp sichuan pepper powder, ¼ tsp ground turmeric, ¼ tsp Ground coriander

Tempering

  • Heat oil. Once hot, add the fenugreek seeds.
    1 tbsp oil (tempering), ¼ tsp fenugreek seeds
  • Cook for a few minutes until brown. Then, pour the oil into the bowl. Mix everything well, and chicken choila is ready to serve!

# Instead of boiling tomato, you can grill it.
# You can use a mixer or blender to make a tomato paste. 
# Please feel free to add green chili according to your taste. Since I like my choila spicy, I’ve added two green chilies.
# You can make chicken choila healthier by using chicken breast and boiling it instead of frying it. Also, you can skip tempering to avoid oil.
