Nepali cucumber achar, or “kakro ko achar,” is a spicy cucumber salad. It is a popular side dish in Nepal that is usually eaten with a meal.

Here is a quick & easy Nepali cucumber achar recipe.

Ingredients

Vegetables: Cucumber and cilantro.

Oil: Any vegetable oil of your choice.

Seasoning: Salt, fenugreek seeds, lemon juice, and black sesame powder. Sesame seeds should be roasted and finely blended.

Spices: Turmeric powder, curry powder, red chili powder or green chili, and sichuan pepper (timmur).

Instructions

ADD ALL THE INGREDIENTS TO A BOWL.
  • Chop cucumber into small pieces.
  • Add salt and let it sit for 15-20 minutes to release some water. Throw the excess water from the cucumber and then add cilantro, sesame seeds, lemon, salt, and sichuan chili flakes to the cucumber.
  • Heat oil in the pan. Add fenugreek seed.
  • Once the fenugreek color changes to brown, add turmeric powder, chili powder, and curry powder to the pan.
  • Let it cook for a minute.
  • After that, add oil to the cucumber. Combine everything well. Cucumber Achar is ready. Either serve it as a side dish with the main course or eat it alone.

I love to pair cucumber achar with rice and chicken curry. You can also serve it with roti with aloo cauliflower curry. When I have guests over, I generally serve it with chuira alongside aloo ko achar.

  • 2 cup chopped cucumber
  • 1/4 cup cilantro

  • 1 tsp oil (Any vegetable oil of your choice)

  • Transfer chopped cucumber to the bowl. Add salt and let it sit for 10 mins. Remove all the excess water and let it sit aside.
