Ingredients for Nepali tomato achar

Vegetables: Tomato, cilantro, and green chili. You can reduce or increase the number of chilies, depending on how spicy you prefer them.

Seasoning: Salt, lemon, garlic, sichuan pepper, and black sesame powder. Sesame seeds should be toasted and finely ground. Whether you use white or black sesame seeds is up to you.

  • Boil tomatoes on medium-high heat for roughly 5-7 minutes.
  • Bring it to a boil, then simmer until the tomatoes are cooked. The outer covering will come off.
  • Remove the outer layer after cooking and transfer the boiled tomatoes to a blender.
  • Combine all spices, seasonings, green chili, garlic, and cilantro in a blender (15-20 seconds) until you have a fine paste.
  • Pour the tomato sauce into a bowl. The dish is ready to serve. It makes a great side dish when served with rice, fried rice, or roti.

Serving & Storage

Serve this tomato pickle as a side dish with rice, curry, and dal. It’s also great with roti, spread over bread, or as a dip for snacks like samosas and pakoras.

For storage, you can store it in an airtight container in the refrigerator for up to five days. I won’t refrigerate it for more than that.

After a certain number of days, it will no longer taste as fresh. While other types of Nepali achar can be stored for months, I suggest you consume this achar within five days.

Notes

# Depending on how spicy you prefer, you can lessen or increase the number of chilies.
# Sesame seeds should be toasted and finely ground. You can use white or black sesame seeds.
